ASSICA and the Bresaola della Valtellina PGI Protection Consortium welcome Coldiretti’s initiative

ASSICA  and the Bresaola della Valtellina Consortium welcome Coldiretti’s announcement regarding the launch of an Italian meat supply chain for products such as bresaola.

This initiative, long-awaited by the industry, represents an opportunity to strengthen the availability of domestic raw materials at a time when sourcing them is a major challenge for processing companies .

The project represents a positive sign for the sector, but will require significant development time: full implementation is expected in at least three years, and the announced quantities will not be sufficient to meet all demand. Imported meat will therefore continue to play an important role in supplying businesses, which are required to select raw materials suited to the specific needs of their various productions.

” The creation of an Italian beef supply chain is a goal the  industry has been waiting for for about ten years and one that we wholeheartedly welcome. For this opportunity to translate into concrete results for processing companies, however, it will be necessary to develop a production capacity suited to the industry’s needs, both in terms of volumes and continuity of supplies. Our production system is  founded on the ability to transform and enhance the raw material , thanks to centuries-old traditions, great expertise, and excellent technologies that make Italian meats and cured meats the most popular on international markets.  Strengthening the national supply chain is important , as is preserving the conditions that allow companies to operate competitively ,” states Lorenzo Beretta, President of ASSICA.

“ We are pleased with this agreement, which represents a positive sign for the future of the Italian supply chain. For the Bresaola della Valtellina PGI sector, however, it is also important to look at quantities: the approximately 5,000 tons expected are still far from the 34,000 tons we process each year and correspond to approximately 15% of our current needs . If we had Italian meat with the characteristics suitable for bresaola production, we would be ready to purchase it. However, the selection of the raw material must meet precise requirements , essential to obtaining the product that consumers know and appreciate. The value of Bresaola della Valtellina PGI also lies in the ability to transform the meat through consolidated skills and knowledge guaranteed by the Production Regulations, which constitute a distinctive element of our production,” states Mario Moro, President of the Bresaola della Valtellina PGI Protection Consortium.
