EDEKA: How fish counters in supermarkets are regaining importance

From its Hamburg location, the company supplies around 260 fish counters in the regional company’s business area – including about 90 service counters under the brand “die fischwerker”.

Hagenah, the fish processing plant of EDEKA Minden-Hannover, processed approximately 2,765 tons of fish in the past fiscal year. This represents a sales increase of seven percent. From its Hamburg location, the company supplies around 260 fish counters in the regional company’s business area – including about 90 service counters under the brand “die fischwerker”. Hagenah thus makes a significant contribution to ensuring that customers in many regions continue to have access to fresh fish from a service counter – sometimes in areas where such specialty fish counters have become rare in grocery stores. In many regions, EDEKA supermarkets with service counters for fish play a special role, as they are sometimes the only providers of this particular product range.

Advice from seafood experts at the service counters

In many EDEKA Minden-Hannover stores, customers are advised by trained seafood experts (certified specialist for fish and seafood / Chamber of Skilled Crafts Münster). With this additional qualification, employees acquire a comprehensive understanding of the entire value chain: they trace the path of fish and seafood from origin through processing and storage to sale. As seafood experts, they can professionally assess the quality of fish, know the most important nutritional properties of individual products, and independently plan the product range.

Several prerequisites apply for participation: Interested individuals must, among other things, have already completed the advanced training to become a Seafood Consultant (certificate from the Münster Chamber of Skilled Crafts), be employed as a sales assistant in the food industry, and have at least two years of professional experience at a fish counter. The qualification itself is an intensive program with seven modules, which take place over 14 months at various locations. Last year, participants traveled to Denmark for a week – in addition to visiting production facilities, a deep-sea fishing trip to the Yellow Reef was also part of this educational journey. Participants take the final exam at the Münster Chamber of Skilled Crafts. Through the EDEKA-exclusive programs for seafood experts, a total of 14 seafood experts and ten seafood consultants were trained in the past fiscal year. In addition, around 240 employees completed the basic and advanced seminars in the field of fish.
