Mexican egg production consolidated itself as one of the most dynamic drivers of the agricultural sector, registering a growth of 6.1 percent in volume and 18.8 percent in value at the close of 2025, highlighted the Ministry of Agriculture and Rural Development (AGRICULTURA).
According to figures from the General Directorate of the Agri-food and Fisheries Information Service (DGSIAP), national production went from 3 million 270 thousand 074 tons in 2024 to 3 million 469 thousand 598 tons in 2025, that is, it increased by 199 thousand 524 tons.
In economic terms, the value of production went from 96,675 million pesos to 114,881 million pesos, which represented an increase of 18,206 million pesos.
Although all 32 states participate in poultry farming, egg production is concentrated in five states that contribute 80.6 percent of the national total: Jalisco, 1,789,061 tons; Puebla, 496,846 tons; Sonora, 204,768 tons; Yucatán, 165,272 tons; and San Luis PotosÃ, 142,820 tons.
At a global level, the federal secretariat highlighted that Mexico ranks sixth among 177 producing countries and contributes 2.7 percent of the world’s production of this key protein.
The egg remains a pillar of the Mexican diet due to its high nutritional value and accessibility, with annual per capita consumption reaching 24.8 kilograms, making it an essential element of the basic food basket and a strategic ally for the country’s food sovereignty.
And to protect families’ wallets and guarantee continuous access to essential products, the Government of Mexico reaffirms its commitment through the Package Against Inflation and High Prices (PACIC), an agreement promoted by President Claudia Sheinbaum Pardo, which helps to maintain stable prices in essential foods such as eggs.
The Ministry of Agriculture and Rural Development, led by Columba JazmÃn López Gutiérrez, reiterated that the recorded performance confirms the strength of Mexican poultry farming during that period, and estimated that its production will remain at a constant and sustained pace in 2026.
This is because preliminary figures show a production of 1,422,420 tons as of May, that is, 40 percent of the target set for the end of the current year.
