Bistecca alla Fiorentina: The Quest for EU Recognition and Global Heritage Protection
The agreement, signed under the umbrella of the Vetrina Toscana project during Vinitaly, marks a strategic turning point in the defense of Tuscan gastronomy. Having been listed as a Traditional Agri-Food Product (PAT) since 2020, the Fiorentina is now pursuing the prestigious European Traditional Specialty Guaranteed (TSG) status. The application, initiated in 2023, is currently awaiting its final submission to the European Commission in Brussels.
More Than a Dish: A Cultural Symbol
The partnership aims to position the Florentine steak not merely as a menu item, but as an authentic expression of Tuscan culture, regional identity, and centuries-old artisanal expertise. The initiative focuses on three pillars of excellence:
Strategic Promotion and Consumer Education
The Accademia and Toscana Promozione Turistica will collaborate across international trade fairs, media campaigns, and cultural events to promote the steak while highlighting the restaurants and butcher shops of the Vetrina Toscana network.
Beyond promotion, the agreement emphasizes nutritional education and the protection of the Tuscan brand on the global stage.

"Defending the Fiorentina means defending our tradition, our workforce, and our commitment to quality. By integrating it into the Vetrina Toscana portfolio, we are investing in a strategy that supports our local operators and protects consumers."
Safeguarding Authenticity
The director of Toscana Promozione Turistica, Francesco Tapinassi, highlighted the steak’s role as a "global ambassador" for quality tourism. However, with global fame comes the risk of imitation.
Giovanni Brajon, President of the Accademia della Fiorentina, issued a firm reminder regarding authenticity: "Such an important name deserves respect. Those who deviate from the codified recipe or use inappropriate terminology risk confusing consumers and devaluing a product that is central to our history.
