Effective sales of fresh meat in the Swiss retail trade

The BLW and Proviande have jointly developed a new method for measuring the effective sales of fresh meat in the Swiss retail trade. Meat sales in retail and out-of-home catering can now be quantified and meat sales in retail can be broken down both by product groups and by type of meat.

Effective sales of fresh meat in the Swiss retail trade

In 2022, the total consumption of meat in Switzerland was around 452,200 tonnes - expressed in fresh meat equivalent. Of these, 50.3 percent were sold in retail. More than half of the quantities of meat marketed in the retail trade were sold in the form of fresh meat. Charcuterie products accounted for around 40 percent. Overall, demand for pork was highest, ahead of poultry. Poultry meat made up the largest share of fresh meat, while pork was the most important meat component for charcuterie products.

The retail channel and out-of-home catering were almost equally important for meat sales before and after the Covid-19 pandemic. During the pandemic years 2020 and 2021, retail became more important as a sales channel, which is reflected in the higher market shares of 56.5 percent and 54.7 percent for meat sales, respectively.

Depending on the sales channel, there were clear differences in the type of meat demanded in 2022. Pork and poultry meat was mainly purchased in retailers. Sales of beef and veal as well as all other types of meat were higher in out-of-home catering.

This detailed information on actual meat sales in Swiss retailers can be provided thanks to a method jointly developed by the Federal Office of Agriculture and Proviande. Based on this new methodological approach, it is possible for the first time to break down retail meat sales both by product groups and by type of meat. In comparison to the total meat consumption in Switzerland, conclusions can also be drawn about the amount of meat that is demanded outside the home. The results of this method are published every year.
