These are the questions that Spanish experts from Educarne centre are ready to answer anytime to eliminate false information about meat consumption and how the industry works and their latest note is focusing on poultry meat.
During the summer, Spaniards are increasing chicken meat consumption but that doesn't wipe out urban myths about this product. María Santervas, a trainer in hygiene and food safety at Educarne, explains which are the most widespread false myths in this regard, among the population.
Does not contain hormones or antibiotics
According to current legislation, the raising of animals with hormones that promote fattening is prohibited, as well as drug residues in their meats, including antibiotics. This regulation is reflected in directive 74/2003 of September 22, 2003, referring to the raising of animals and putting meat from poultry on the market.
Santervas specifies: “The use of antibiotics is allowed to treat any disease if the animal requires it, although the mandatory times must be respected afterwards, to ensure that there is no longer a trace of antibiotic in the animal. Therefore, the farmer must wait the appropriate time before sending it to the slaughterhouse for its subsequent circulation. If these measures are not respected, the professional can be sanctioned. "
You can consume the skin
Chicken skin can be eaten, as it is hormone-free, as explained above. Bacteria that may be present on the skin part would be eliminated with simple complete cooking of the piece, always ensuring that there are no bloody parts and that all the meat is white.It is very important not to wash the skin because the bacteria that may be present would spread thanks to the water.
