The Spanish Serrano Ham Consortium surpasses 20 million certified pieces

In the second half of 2025, the Spanish Serrano Ham Consortium (CJSE) surpassed a total of 20,000,000 certified pieces — a milestone achieved since its creation in 1990. As of October, the Consortium has already recorded 20,225,495 pieces under its ConsorcioSerrano seal — a label guaranteeing quality and 100% Spanish authenticity — representing an estimated 30–35% of all high-quality Serrano ham exports.

This achievement coincides with the Consortium’s 35th anniversary. For 35 years, the CJSE has been dedicated to safeguarding the authenticity and excellence of this unique product. The milestone also highlights the Consortium’s strong presence in the sector and the continued recognition of its quality seal in international markets.

“Reaching 20 million certified pieces under our ConsorcioSerrano seal represents a decisive step in the work we have been carrying out for the past 35 years to ensure top-quality Serrano ham in international markets. This milestone reflects the strength of our model, the trust placed in us by our members, and the growing recognition of premium Serrano ham as a gastronomic ambassador of Spain”, says Álvaro Díaz de Liaño, Marketing and Promotion Director of the Spanish Serrano Ham Consortium.

The ConsorcioSerrano seal and its quality standards were created to provide an institutional guarantee that identifies pieces produced in accordance with the Consortium’s strict criteria, and that successfully passing rigorous quality controls and selection processes required for export.

Among the Consortium’s quality standards are exceptional texture, aroma, and flavor; the exclusive use of Spanish raw materials; a minimum curing period of 12 months; and manual selection, all of which reinforce the product’s association with excellence in the sector.

Today, ConsorcioSerrano ham is available in more than 60 countries worldwide, with a steadily expanding presence in non-EU markets.

To continue strengthening the project’s reputation, guaranteeing its quality, and showcasing the virtues of Spanish Serrano ham, the CJSE has maintained an active promotional agenda throughout 2025 in France, Mexico, the Netherlands, the United States, Japan, Australia, and China.
