Game meat finds its place in the European food market

Karl Berger, General Manager of Hochlander Wild, explains what customers want from a game meat cutting plant.

Game meat is making its way in the European food landscape, with more and more companies presenting their products at the Anuga 2019 trade fair. Hochlander Wild GmbH, a meat cutting unit specialized in wild game, currently sells its range of products in more than 13 countries across Europe and has witnessed the changes in this market segment for the last couple of decades.
"We don't have a special product. We acquire the whole animal from hunters and have to make the best of it. At this moment, 80% of our customers are permanent clients. We have wholesalers who distribute our products to restaurants but we also serve the industry with raw material. We deliver to industrial companies that are making sausages, patties, ready meals from it", stated Karl Berger, General Manager of Hochlander Wild.
Started from the passion of hunting of his father, the company has developed and expanded its range of operations in the last decade. At this time, Hochlander Wild has taken the task of cutting the game meat after the client's requirement but there is one area that does not intend to step in. "We are not going to compete with our clients and start producing processed wild game products", explained Mr. Berger.
This year at the Anuga trade fair, the game meat segment was represented by producers from Germany, Austria, Hungary, Latvia, Wales, New Zealand, South Africa and Australia, their presence showing a larger market share for this products in the developed, mature markets across the globe.
