Consorcio Serrano, a private association of 29 producers of cured ham, is used to promote their products abroad but problems seem to appear where you don't even expect. In the last few years, the Spanish Market has been invaded with fake products that are sold as Serrano ham (Jamon), even if the original items are destined only to the export market.
"They sell into Spain. This is more in Iberico than in Serrano hams. We are protecting our brand by applying this seal to every ham selected by us. Also, it has its own number. We also protect the quality of our product by producing it in Spain", explains Carlos del Hoyo Rodriguez, Marketing Manager, Consorcio Serrano, in an interview for EuroMeatNews.com.
New trends in the markets are a little bit concerning for the cured ham exporters of Spain considering the fact that in some markets consumers are asking for less salt in the meat but that is not a solution for the Spanish cured ham. At this time, Consorcio Serrano is exporting most of the hams to countries like Germany, the Netherlands, the US, Mexico and France but is also interested in opening new markets in the near future.
